چکیده

Production of propionic acid by Propionibacterium shermanii CDB 10014 was enhanced by a pH value of 6.5 and by temperatures in the range 35-37 °C. Depending on the type of yeast extract, succinic acid can be produced in higher proportions, with decreasing propionic acid yields. With respect to propionic acid production, Difco yeast extract has shown the best results when yeast extract preparations from other different suppliers were compared. To replace yeast extract by a cheaper vitamin-nitrogen source, corn-steep liquor was tested. A complete depletion of glucose was achieved, yielding a final propionic acid concentration of over 35 g/1. These results are even better than those obtained with Difco yeast extract and suggest the possibility of an economical process based on corn-steep liquor.

Fed-Batch Production of a Fermented Beverage Containing Vitamin B12

Production of fermented functional foods containing micronutrients is required for their health beneficial properties. The impact of 11 process variables on vitamin B12 production in a dairy beverage containing propionic acid was investigated. Propionibacterium freudenreichii ssp. shermanii was applied in a 3-l fermentor in the fed-batch fermentation system. The most suitable conditions for...

Effect of Aeration on Organic Acid Production by Propionibacterium shermanii

Propionibacteria have been reported as being oxygen sensitive bacteria. Nevertheless, in this work, we intend to show that Propionibacterium shermanii CDB 10014 is able to grow even at high volumetric oxygen transfer coefficients (KLa). Similar final cell concentrations were achieved in experiments at different KLa values, with increasing cell yield from 0.08 g/g cells in anaerobic con ditions...

Effect of ultrasonic treatment on metabolic activity of Propionibacterium shermanii, cultivated in nutrient medium based on milk whey

Utilization of milk whey still remains one of the most serious problems of the modern world dairy industry. Because of high biological value of whey it can be used as nutrient media in techniques of direct microbiological synthesis of complex high-molecular substances, for example the B12 vitamin, which participate in various biocatalytic reactions in organism providing normal functioning of th...

Effect of Whey Permeate and Yeast Extract on Metabolic Activity of Bifidobacterium Animalis Subsp. Lactis Bb 12

In fermented products containing Bifidobacteria, factors such as organic acid concentration and b-galactosidase activity are important in the development of flavor and texture of final products. Both the process conditions and medium components have significant effects on fluctuation of such factors. The effects of whey permeate powder and yeast extract concentrations, as nitrogen sources was i...

An economical biorefinery process for propionic acid production from glycerol and potato juice using high cell density fermentation.

An economically sustainable process was developed for propionic acid production by fermentation of glycerol using Propionibacterium acidipropionici and potato juice, a by-product of starch processing, as a nitrogen/vitamin source. The fermentation was done as high-cell-density sequential batches with cell recycle. Propionic acid production and glycerol consumption rates were dependent on initia...
